Recipe to try this week: Slow cooker vegetable lasagne

I've been trying to make the most of my slow-cooker lately, both for convenience and to save on energy costs. I decided to branch out and experiment with some dishes that I would normally only make in the oven, and stumbled upon this fantastic vegetarian lasagne recipe. I have to say, the flavour was delightful and it was incredibly easy to cook. However, the downside was the presentation. If you were hoping for a perfectly set lasagne, you may be disappointed with the messiness of this dish. Nevertheless, if you're looking for a quick and healthy comfort food option for yourself and your family, this recipe is worth a try. One thing to be mindful of is achieving the right consistency. It can be tricky to get it just right, as adding too many vegetables can result in excess water and using too few can cause the lasagne sheets to not cook properly. It may take a few attempts with some trial and error to achieve the consistency that you desire.
